However, don’t feel the need to be too strict: those dates are a human convenience construct only. Here’s how I plant: Early season crop (Turban variety) in April Mid and late season crops (Creole, Artichoke, Marbled Purple Stripe and Standard Purple Stripe varieties) in May and June (staggered for convenience) First, prepare the soil If you didn’t already do this at the end of summer, now is the time. If you’ve left soil improvement until right before planting, that’s ok: just ensure you dig in well-aged manures or pelletised forms of manures and compost so that you don't 'burn' your plants. Test your soil’s pH before you add anything, and before you plant out. Aim for a slightly acidic to neutral pH of 6.5-7.5. CHOOSING CLOVES The better the quality and health of your ‘seed’ cloves, the better outcomes in your crop. We can’t access true garlic seed in Australia (that’s a whole other story) so we grow garlic vegetatively, ie from replicating the parent plant by planting cloves. Because of this, any disease or virus the parent plant has, is also present in the cloves. I recommend sourcing fresh Australian grown ‘seed’ garlic bulbs because imported garlic is sprayed to stop sprouting and has been fumigated with rather nasty substances. Plant out the best ‘seed’ cloves that are the largest, have no dents or dings, mould of any colour, or shrinkage. Late season varieties like Standard Purple Stripe will probably do best, and aim to get them in as early as possible. Use the guide I shared in Autumn for tips on what to do, and how to know when your cloves are ready to plant. In the last month of winter, for us that is August, you can plant a second crop of garlic to grow ‘rounds’ or super single cloves, which you can plant out again to grow into multi-cloved bulbs in Autumn (or just eat!). Watch the leaf colour By mid to late winter, your garlic plants should have four to six leaves on them and are looking lush and green. Any discolouration of the leaves (red/purple/yellow) suggests a nutrient deficiency that will result in the leaf dying, leaving the plant with reduced nutrient uptake/conversion. Take heart, it may easily be fixed with a trace element correction if you act quickly before it impacts greatly on the plant. Whilst this time of year is too cold for major growth, there is still some action because of the weather (if the plants were under snow it would be a different ballgame). If you can, act now to ensure the plant is ready to thrive once the warm weather starts and growth takes off. Strong healthy plants are better placed to fight off disease and pest attack. How to add nutrients If you think you need to add nutrients, start gently. I don't recommend dousing the plants in nitrogen rich products that take a scattergun approach to fix a nutrient problem. Whilst you may fix the nutrient deficiency, you may create further issues because it is a broad-spectrum product (for example, nitrogen bloat). I use a specific organic product called Nutri-Key Shuttle 7 by Nutri-Tech Solutions that helps address any deficiencies in the plant. I recommend applying this by foliar-spraying, rather than a watering can. https://www.longviewgarlic.com.au/spring daily 0.75 2020-09-24 https://static1.squarespace.com/static/5f32389bf0187f4360c119ce/t/5f6ac474c3daac1a522df22e/1600840804691/basket+of+greens+rectangle+4by5+crop.jpg Spring - Spring Once the weather warms up to daytime temperatures above 16 degrees Celsius, new growth will be picking up so it’s a good idea to start feeding your bulbs. Harvest green garlic Depending on the type of garlic you have in your patch, mid spring is the time to start enjoying the luxury of fresh and green garlic. Green garlic is fresh uncured garlic that is pulled before the papery skins on the cloves and bulbs start to develop. Garlic can be pulled from just before bulb formation right up to full size with cloves visible. Garlic greens refers to the above ground part of the plant, including the scape or flowering stem. When selecting which whole plants to pick, I start with those with the thinnest stems. This ensures you are getting an entirely edible plant with tender leaves and stem. Leave the larger plants to develop good sized bulbs (and hence cloves) for pulling fresh or leaving to cure. Some varieties of garlic, and depending on where you live, and the weather conditions that growing year, may throw up flowering spikes called scapes. These too are edible, best when harvested at 10-20cm long so they stay tender. You can leave them to grow flowers that produce bulbils. These are teeny tiny cloves that can be grown into bulbs, in about 3-4 years. Or you can eat them as tasty garlic bombs sprinkled onto salads. Rarely available at any market, access to green garlic is a wonderful benefit to growing your own. Fresh garlic is something we are just not used to seeing in Australia. Mild, crunchy and sweet, it offers a different flavour layer and dish options to chefs and home cooks alike. Because the whole plant is tender you can halve them lengthways and char-grill creating a creamy central heart or slice and throw into a stirfry as the hero green. Fresh and green garlic will last about three weeks if refrigerated. https://static1.squarespace.com/static/5f32389bf0187f4360c119ce/t/5f6af0b66b4876157e94e082/1600844148777/_MG_0212.jpg Spring feeding your plants When growing garlic in the kitchen garden it is much easier to keep the garlic well fed and watered than out in a paddock. Consequently some of this may not apply because the soil is already vibrant and teeming with goodness. As the days start to warm I like to start a weak feeding regime, applied every 2 weeks by foliar spray (not a watering can!). I do a quick soil pH test (10cm down) to ensure the soil is still within the range of 6.5-7.5pH. Soils within this range will make available all the nutrients to the plants. I feed the garlic plants micronutrients and fulvic acid (for roots and shoots development) at 50% dilution. I feed the soil with a sprinkle of a low nitrogen organic pelletised fertiliser and water in a soil conditioner at 50% dilution. Watering can become important at this time of year as spring can bring all sorts of weather. Aim to keep the soil cool, moist (at the bulb site) but not wet. Garlic hates wet feet so be careful not to overwater. vigilance The warming weather is prime growing time for both the garlic and the pests and disease that can strike. Strong healthy plants grown in good soil are the best way to grow quality food organically. Keep an eye out for aphids, be prepared to apply an organic pest spray and signs of plants loosing their vigour. Sudden yellowing of the leaves ahead of schedule or the plant keeling over is a sign there is something going on underground. Be brave, pull a few plants to see if the bulb is forming well. Ideally the bulb will be uniform in colour with no mould, no smell, and has good root development with no root dieback. Others in cooler climes (read days below 30°C) can leave their plants out in the field to start the drying process for about 24hrs. Prepare the garlic for hanging and hang in a cool, unlit, well ventilated space. This may be your verandah, garage, pantry, cellar, or spare room. After eight months of growing, the first 14 days after harvest are the most crucial for curing the bulbs to ensure their good storage. Prepare the garlic by rubbing off any dry skins and dead leaves, removing any soil on the bulb, and cutting off the roots either entirely or very very short. By reducing the amount of unnecessary moisture-laden material on the plant, the plant will cure more effectively and ensure longer shelf life. At the same time, I like to keep the green leaves on the plant to enable the bulbs to draw down as much nutrient (hence flavour) as possible during this time. So the bundles are small and very well spaced when hung. The garlic is hung on drying racks and air-dried for a minimum of four weeks. I check on it daily to confirm things are progressing well and there is no evidence of disease or pests. From early November, I stop watering my garlic, and start to check the crop daily. The tell-tale sign is the number of green leaves on the plant: each green leaf becomes an outer bulb skin during the curing process. Note that if you wish to cure your garlic (as opposed to eating it straight away), prepare a space to hang/store your garlic before you harvest (see “Curing” below for tips). WHEN TO HARVEST Harvest early-season garlics, like the Turban group, when there are 4.5 green leaves left on the plant Harvest mid-season garlics, like Creoles, when there are 3 green leaves left on the plant Harvest late-season garlics, like Standard Purple Stripes, when there are 3.5 green leaves left on the plant Avoid harvesting in the rain, or near any rain events. It is a good idea to stop watering for two weeks before you think you might harvest. This is truly the only time I ever actually hope for no rain.
